Tatsumi Gin
The Tatsumi gin is produced in Japan by the homonymous distillery. Located in the heart of Gifu prefecture, it opened its doors in the summer of 2017. At the foot of the Japanese Alps, it continues to distill, while remaining faithful to traditional practices and materials.

The distillery utilises a copper kettle and a Kabutogama alembic to create superb gin and absinthe. The kabutogama still is a distillation tool originally developed in the Edo period (1603 - 1868), and it was widely used until the end of the 19th century. This production method takes a lot of time and effort, but Mr. Tatsumi - the owner of the Distillery - has innovated its use, to create artisanal and original spirits that are slowly gaining respect from colleagues and consumers.
