Akashi is a blended whiskey without age definition, created with single malts from the White Oak distillery and wheat whiskey, which replaces molasses for the European market. It is composed of 30% barley malt; it stands out for its soft and balanced finish and characterized by pronounced aromas of American oak and vanilla.
The White Oak distillery, founded in 1888 by Eigashima Shuzo, produced classic sake until 1984 when it was expanded with the addition of whiskey stills. The stills of the distillery only work for one month a year; therefore, the amount of whiskey produced is always very small.
Following carefully and rigourously each working step, the Whiskeys first undergo a double distillation process, and then move on to the aging phase in oak barrels: during this phase the distillate takes its characteristic amber colour and all the organoleptic nuances that will distinguish it, both in the olfactory bouquet and in the taste. Left to mature for a minimum of three years to a maximum of eight years, this is how the Whiskeys branded "White Oak Distillery" come to life. “White Oak Distillery” whiskies can undoubtedly be included among the best spirits currently available in Japan.
