After the success of Frutti and Opéra, Grolet returns with a new volume dedicated to haute patisserie: 77 recipes for tarts, semifreddos, logs, galettes and other desserts that evoke flowers, a subject that the star pastry chef prefers and whose videos are viral on Instagram.

Like a craftsman, Cédric Grolet magically sculpts petals and pistils of his sweet flowers. It gives the right space to technical gestures - for example the pochage, fundamental in pastry creations - completing them with advice for mastering such a precise art.

The recipes are divided according to the seasons to discover how to take advantage of edible flowers. The volume also presents a large variety of tart bases (sablée, dry biscuits, shortbread, puff pastry...), for increasingly delicious and creative recipes.
